FIELD GUIDE
The story
The Hilltop Steak House on Route 1 in Saugus, Massachusetts, is gone, but its 68-foot green cactus sign still stands. Boston.com wrote in May 2026 that it "still presides over Route 1".
The Hilltop opened in 1961. A 1987 Boston Globe article, quoted by Boston.com, cited a trade-magazine estimate that it did more business in 1986 than any single restaurant in the country, with $26.9 million in sales (Hilltop managers would not confirm the figure) and 1,400 seats. Customers queued around the building, and life-size fiberglass cows grazed the front lawn. The restaurant closed in 2013 and was demolished in 2015, but the sign survived and was kept by AvalonBay Communities, the developer of the mixed-use Avalon Saugus, which includes 24,000 square feet of retail and 280 apartments.
