FIELD GUIDE
The story
Peter Jackson-Calway owned the Mocador Café in Goulburn, and around 1984 he built himself a factory on the Hume Highway at Marulan shaped like a large pink and white pavlova.
It made pavlovas, as you would hope, along with handmade chocolates, and it supplied his café up the road. The shape was the advertising: a building that announced its product to every car heading between Sydney and Canberra, at a time when the highway still ran straight through the town.

WHAT TO EXPECT
The Mocador Pavlova Factory closed in 1991 after the highway bypass. The altered building remains part of Marulan’s local history, but it no longer operates as a visitor attraction.
